Perfect Standing Rib Roast
2-to-4-rib roast of beef (4 ½-12 pounds), short ribs removed

Remove the roast from the refrigerator 2 ½ to 4 hours before cooking, the longer time for the largest roast.
Preheat the oven to 500°F. Place the roast on a rack in a large, shallow roasting pan, fat side up. Season generously with salt and pepper to taste. Put the roast in the oven and cook according to the chart below, timing exactly. When the cooking time is up, turn off the oven. Leave the roast in the oven for 2 hours, and DO NOT OPEN THE OVEN DOOR FOR ANY REASON UNTIL 2 HOURS HAVE PASSED

Pre-heat oven to 450 F.
Wash the bird inside and out and dry it thoroughly with paper towels. Salt and pepper well inside and out. Put it in a shallow roasting pan and roast for an hour.
Let it rest for 10 minutes then slice.
If you want you can stuff the inside with herbs, or onions and apples, anything fragrant that adds flavor to the meat.
Sometimes I rub the inside of the chicken with orange marmalade.

    Weigh the roast to the ounce, and compute your cooking time based on 7 minutes per pound. Do not estimate or "round up" or the roast may be overcooked.
    Season roast as desired; place on rack in shallow roasting pan. Do not add water or cover.
    Place roast in the preheated oven and lower temperature to 475°F. Roast at 475°F for 7 minutes per pound.
    Turn oven off and let roast sit in oven 2 1/2 hours
